Cheesy-Chicken-Noodle-Casserole SMI’m not even going to try and play it cool right now and lead you to believe this post was my intention today.  Today’s recipe was supposed to be something sweet and delicious that involves pumpkin, maple, cinnamon, and lots of butter.  However, I’m traveling at the moment, and  I only realized half way into my trip that while I remembered my lap-top, I failed to bring my external hard drive.  Ya know, the one with all of my photos for the post on it.  Sooo….sorry.  Can we still be friends?  I hope so, because I’m about to make you virtual dinner.

I always feel a renewed motivation for dinner time with the change in a season.  And now that fall is here, I’m pulling out my slow cooker, and the dutch oven, and all of my stock pots, and re-visiting cozy comfort-food that I haven’t seen since last fall.  One thing that I absolutely love, is a good recipe that can be prepped early in the day.  There is nothing better than seeing that dinner hour approach and knowing that all you have to do is pull something right out of the fridge and pop it in the oven.  Bonus points for having all of the dinner prep dishes already clean as well.  So on that note- I want to share 5 awesome casserole style dishes that can all be made earlier in the day.  These are all really popular OBB recipes with good reviews, so I hope they’ll become family favorites in your homes, too!

Creamy Chicken Noodle Casserole

My kids love this one.  It just tastes like…home.  Tender chicken, homestyle veggies, and a creamy cheesy sauce.  Retro cracker crumbs on top are icing on the cake.  –> Click Here for the recipe <–

Tuna Noodle Casserole

This ‘aint yo momma’s tuna noodle.  (I can’t believe I just wrote that).  An updated classic, this dish boasts a creamy homemade sauce, sautéed celery and mushrooms, and a buttery crumb topping.  Bright citrus blends perfectly with the seafood flavors.  We get tons of emails from readers telling us how much they love this one!  –> Click Here for the Recipe <–

Tortellini Spinach Bake with Creamy Lemon Sauce

This is another reader-favorite.  I keep boxes of dry tortellini in my pantry so this can come together really quickly with just a few additional ingredients.  It works great as either a main dish, or a side dish.  –> Click Here for the Recipe <–

You hit two that I want to try, one that I need to make again, and 2 that are family favorites. Is there a way I can have all of these for dinner tonight? Every one of them is perfect for the cold, rainy day we are having.

Oh my gosh, you’re a lifesaver. Not actually because of these recipes – though the tortellini one looks fun, and I’m for sure checking out the “guiltless alfredo sauce” – but because you mentioned the crockpot. Which reminded me to call my husband and ask him to take the crock out of the fridge, put it in the crockpot, and turn it on! Otherwise our Shabbat dinner guests would have been extremely hungry tonight…

Can the lemon be left out of the tortellini recipe? I am not a huge fan of lemon and neither is my husband. Otherwise, it looks delicious!

Can we freeze these casseroles as freezer meals (the chicken & tuna ones in particular)? If so, please give us tips on how. Thanks!

Desa, I’ve never frozen those, but generally that type of casserole does just fine frozen. I would freeze after the mix goes into the pan, and then if possible bring to room temp in the fridge before cooking, or cook it for a little longer from frozen.

4 of the 5 are favorites around here, and the fifth (the chicken noodle) was already on my list to make this month. Thanks for delicious, simple, and inexpensive meals!
