If there’s one thing we love around here it’s Latin Food. Well, that and chocolate food. And food with bacon in it. And melty cheese. And garlic. And garlicky melty cheese with bacon on top. And strawberries, sunshine, puppies, fresh washed laundry, soft sugar cookies, new shoes, Diet Coke, M&M’s, and world peace.
But seriously, Latin food is way up there on the list.
So in honor of Cinco de Mayo tomorrow, I thought I’d post a bunch of our favorites. Ole!
I’ve linked all of the photos in this post- so click the photos to see the recipes!
Also, in case you didn’t know this. And I know there are people out there who don’t, because I went through much of my adult life without knowing this and my world changed one rainy day when my husband showed me. (That’s how much it changed my life, I remember it was raining.) You know when you’re going through blog posts, or browsing clothes on-line, or whatever, and you want to keep clicking on links but then you have to click the back button to get back to the original page and it’s super annoying? Just put your cursor right on the link (or on the pictures below) and click the little roller-ball thing in the middle of the mouse. It will automatically open the link up in a new tab. You can keep on, keepin’ on and clickity-click to your heart’s content without leaving the page you’re on. Then when you’re done you can go look at all of the fun tabs you just opened. Got it? I know that had to help at least one soul out there- admit it. Okay, here we go.
Chicken or Steak Fajitas.
Seriously if I had to eat one meal every day for the rest of my life, it would be this.
Virgin Mojitos (or Lime-Mint Spritzers)
Make it just to say the name. Mojito. It’s fun.
Mango Pico de Gallo
Sweet, salty, tart, juicy, all in one bite.
Southwest Pasta Salad
This is an awesome twist on a traditional pasta salad. It’s always popular when I take it to potlucks and it’s a terrific make-ahead recipe.
Mexican Corn on the Cob {Aka: Elote}
oh my gosh oh my gosh oh my gosh. So good.
Also, there’s a picture of my “baby” in that post. He just celebrated his 3rd birthday this week and the pictures in this post make me teary!
Homemade Tortillas
If you’ve never made homemade tortillas, Cinco de Mayo is the day to do it!
Easy Black Beans
This might be the thing that I eat the very most in my house. Love.
Chipotle Beef Taquitos
Our Baked Creamy Chicken Taquitos seem to get all the love around here. Seriously, you people are crazy in love with those (not that I blame you. They’re fantastic.) But these beef ones are pretty stinkin’ awesome too. Try them out!
Beer Battered Fish Tacos
Beer battered fried fish in a home-fried tortilla. Need I say more?
Beef Tacos
Like, real beef tacos. Amazingly good.
Taco Soup
Easy. Convenient. Healthy. Comforting. Delicious!
Grilled Fish Tacos
I don’t even like seafood (like, at ALL) and this makes me want to eat a fish taco. Probably because it’s slathered in one of the best dressings ever. And if *I* want to eat it, you people who actually like seafood will go crazy for these!
Roasted Tomatillo Salsa
Try it on, well, anything!
Check out the Latin section in our index for even more south-of-the-border deliciousness- including even a few treats!
And BOISE peeps! Are your calendars marked?? This weekend- I want to meet YOU!
Friday night, Deseret Book on Eagle Road in Meridian. 5-7 pm
Saturday afternoon, Nampa Costco 12 noon-1:30
(Just so you know Costco has suuuper cute MikaRose dresses right now!)
Holy wow! These are some delicious looking recipes! Our family’s favorite food to eat is Mexican or Tex/Mex. I just made those chipotle beef taquitos and they loved them! I will be saving all of these recipes for later. I bet we eat them all 🙂
hii i like your blog i have to say something i am a mexican women and i can tell you that the tortilla of a taco is supposed to be smooth not crisp if it is crisp then it is just like a tostada and is really different it is just an advice i hope you dont take it in a wrong way .
but any way you tried it very well by doing mexican food but i have to say is not real mexican food .
sorry for the bad english .
I have been using your roller-ball tip since I read this post at the beginning of the month–Life changing!!! My husband always teases me because I have 20-30 tabs open that I finally get around to reading each night. Now I can open links so much faster without right clicking. Who woulda thought?! Thanks!! BTW Love all your Latin foods!
Here is my most recent quest: find a way to keep corn tortillas moist when serving traditional mexican tacos… and ideas?
The only trick I know of is to keep them wrapped in a moist towel. Works pretty well!
Oh my, this post is making me hungry! You can bet I’ll be off to the store tomorrow to pick up some ingredients. Thanks!
That corn looks absolutely yummy!
Made the tortillas last night and they were great and easy to make! I just wish I could get them to be more perfectly round. Any suggestions on how to do that? Thanks for all the yummy recipes!
Amelia, when I do it, I roll them out into a circle, and then place an upside-down bowl on top and cut around it with a sharp knife. They turn out pretty perfectly round!
Bought your cook book about a month ago and I LOOOOVE it! Thanks for posting all these Cinco de Mayo recipes. We made enchiladas tonight with homemade tortillas and the mexican style shredded pork -they were fantastic! Can’t wait to try some of the other ones next year! We made a pinata too. I think this will definitely be a yearly tradition.
Tonight I threw together your black beans as well as your pico de gallo AND mango pico de gallo. Oh SO Yummy!!!! The black beans may just become a staple in my diet. We loved the flavor! Can’t wait to make them again. (Do you think tomorrow is too soon?) 🙂
Love your recipes and Cinco de Mayo, but THANK YOU SO MUCH for the mouse clicker tip!! AWESOME!
Holy Cow! Wonderful site, wonderful recipes…but how cool is that click the middle button to open a new tab tip! I went clicking away just to see it work over, and over, and over again. Thanks a million!
yum.. that mango pico de gallo looks DELISH!! i’ll definitely have to try that one asap!
So I usually just right click and hit the “open in new tab” thing, but the roller button click thing is so much easier and more fun! Thanks for changing my web surfing life…not that that is all I do or anything, but it changed my life. Oh, and the commenter who mentioned the space bar trick…who knew? Love your blog. Thanks!
Made to Taco Soup to take for lunch in honor of Cinco de Mayo (although I snuck a little tonight) yummy!
