It’s Flashback Friday time! I’m not exactly sure why this is called Spanish Rice. Pretty sure none of these ingredients are actually Spanish. And this isn’t rice like anything I’ve ever had in a Mexican restaurant (and yes, I do understand that “Spanish” and “Mexican” are two different things.) But it’s still one of my favorite comfort foods. It was when I was in college and my roommate introduced me to the recipe. It still is now, when things in my life are good and when things in my life are not-so-good. It’s easy, it’s inexpensive, and the leftovers are amazing.
