Marshmallow Caramel Popcorn

Ingredients

  • 1 bag about 8-9 cups microwave popcorn
  • 1 cup brown sugar
  • 2 tablespoons light Karo syrup
  • 1/2 cup 1 stick butter
  • 1 teaspoon vanilla extract
  • 12 large marshmallows 3.6 ounces

Instructions

  • Pop the popcorn and transfer it to a large, heat-safe bowl, picking out any unpopped kernels. Set aside.
  • In a heavy saucepan, combine the brown sugar, Karo syrup, and butter. Bring to a boil over medium heat, then reduce heat to medium-low and cook for about 7 minutes. Add the marshmallows and vanilla and stir until the marshmallows are melted. Remove from heat. Pour over the popcorn and stir quickly to evenly coat the popcorn.
