Mint Chocolate Oreo Rice Krispie Treats

Before we talk about puffed rice and oreo cookies enrobed in marshmallows and butter- if any of you missed Monday’s announcement and blog post, click here to check out our new Fit & Fast Meal Plan!  We’re thrilled you guys are loving it already.  We also believe indulgent desserts are part of a well-rounded diet, which brings us to today. Haha.

If you didn’t know, we have a whole section of our blog dedicated to rice krispie treats because we love them so much.  St. Patrick’s Day is this weekend and honestly when I think about green- my mind instantly goes to mint.  I realize this has nothing to do with Ireland but hey, it’s green and you get points for that.

Mint Chocolate Oreo

Even with all of the amazing special edition Oreos, Mint Oreos will always be my true love.  This is a super easy treat you can whip up, and if you want to make them extra green, throw some food coloring in! So one thing I think makes krispie treats extra delicious is including some whole marshmallows in the mix.  So I always start by adding about 1 cup to the cereal.

Then you’ll chop up your oreos

Mint Oreos

and stir those in as well.  In  a separate pan on the stovetop you’ll make that magical marshmallow-butter goo and spike it with a little peppermint extract and then mix it all together.

You can adjust your pan size depending on  how thick you want these.  They’ll make an extra thick 8 or 9″ pan (mine shown here is about 9″) or thinner with a larger pan.

I love the chunks of chocolate and soft oreo filling that’s studded through.

Rice Krispie Treat

Mint Oreo Rice Krispie Treat


Ingredients

  • 5 cups rice krispie cereal
  • 10 cups mini marshmallows one 16oz bag
  • 10 mint oreo cookies
  • 6 tablespoons butter
  • 1 teaspoon peppermint extract

Instructions

  • Line a 9x9 (or 8x8 or something around there) pan with parchment paper and set aside. 
  • Place cereal in extra large mixing bowl.  Add 1 cup mini marshmallows.  Coarsely chop oreos and add to bowl with cereal.  Melt butter in a large pan on stove top.  Add marshmallows and stir on low heat until melted and smooth.  Remove from heat and stir in extract.  Immediately pour over cereal mixture and stir well to combine.  Transfer cereal mixture over to prepared pan and gently press down with spoon.  Let cool completely and then cut into squares.

  1. Wow! Best idea ever!
    I don’t even really like Oreos or Rice Krispie treats…I could pass on either any day. But add MINT and apparently I’m an addict!

  2. (*cue sarcastic and dramatic inner monologue voice) “Great. Just what I need. A dessert that combines all of my favorite things… rice crispy treats (check), mint/chocolate combination (check) and Oreos (check)… the perfect recipe to pull me into the maelstrom of caloric excess. Oh, the dismay in the lack of self control with such treats….”

    I need to make these on a Sunday (early Sunday morning… definitely not Saturday night…. eek I’d eat the all) and pass out half of them to the youth and primary kids, saving myself an appropriately sized portion, thus saving myself from caloric mayhem.

    But in all seriousness, these look awesome!
