Mixed Berry Baked Oatmeal

Baked oatmeal is one of my favorite breakfasts as we move into the cooler months. (Ha! I say “cool,” but really, we’ve just had the hottest 3 days of the year and I’ve reached that point where I think if I start making fall food and burning fall candles and wearing fall clothes, maybe I can will fall upon us, but in reality, I just want to burn everything down to the ground and rip my sweaty jeans off my legs.) If you doubt my love for baked oatmeal, check out our original and blueberry with lemon and ginger varieties. This Mixed Berry Baked Oatmeal is kind of like Donny and Marie, a little bit summer (mixed berries!) and a little bit chilly fall (apple pie spice and orange!) It’s perfect for slow weekend breakfasts, or assemble it the night before and pop it in the oven before your kids wake up for a heartier breakfast than Cinnamon Toast Crunch, which about as seasonal as I get most fall weekday mornings.
You’ll need some old-fashioned (not quick-cooking) oats, brown sugar, kosher salt, apple pie spice, baking powder, frozen triple berry mix (preferably raspberries, blueberries, and blackberries), orange zest, milk, butter, vanilla extract, and eggs.
Spray a 9″ pie plate with non-stick cooking spray. Set aside.
Preheat oven to 350 F. In a large bowl, combine the oats, brown sugar, apple pie spice, baking powder, salt, berries, and orange zest.
In a smaller bowl, combine the milk,
butter, vanilla,
and eggs. Whisk together.
Add the liquid mixture to the dry mixture and whisk to combine. Spread in a deep 9″ pie plate or an 8×8″ or 9×9″ baking dish.
Bake for 40 minutes or until the top is golden brown.
Serve immediately with a splash of warmed milk. Serves 8.

Ingredients

3 cups old-fashioned oats (not quick-cooking)
3/4 cup brown sugar
1 teaspoon kosher salt
2 teaspoons apple pie spice
2 teaspoons baking powder
1 cup frozen triple berry mix (preferably raspberries, blackberries, and blueberries)
Zest of 1 oranges
1 cup milk
1/2 cup butter, melted (you can substitute applesauce for 1/4 c. of the butter if you want)
1 tablespoons vanilla extract
2 eggs

Instructions

Spray a 9″ pie plate with non-stick cooking spray. Set aside.

Notes

If you’d like, assemble this the night before, cover, and then bake in the morning.

  1. Ha! We are celebrating that today we’re staying under 100. That’s fall, Phoenix style. 😉 I’ve been burning my Magnolia Fall candle for the last week to get in the mood. This oatmeal looks delicious! I’m excited to try it!

    1. I get the love for steel cut oats! I don’t think they’d work very well in this recipe, though (sadly). There’s not enough liquid or cooking time and the desired texture of this vs. the desired texture of steel cut oats are two totally different things. 🙁
