S’mores Rice Krispie Treats

Sara and I have a long-standing love affair with Rice Krispie Treats. In fact, we’ve recently devoted an entire section of our blog to them.  Part of it is that I love them and part of it, I think, is that they were the very first thing I ever learned how to cook and there is very little in life that is as thrilling as watching marshmallows and butter melt together. Very. Little. And since we’re in the middle of summer (aka The Season of S’mores), it’s only natural that we make S’mores Rice Krispie Treats. They smell like an old-fashioned ice cream shop. They taste like summer. My son actually told me that my creative powers were responsible for the two greatest things in the room: him and the S’mores Rice Krispie Treats.

You’re going to need marshmallows (divided), Teddy Grahams (or graham crackers broken into bite-sized pieces–I like the Teddy Grahams because in additional to being adorable, they’re not nearly as crumb-y as graham crackers), chocolate chips, butter, vanilla, and Rice Krispies.S'mores Rice Krispie Treats

Line an 8×8″ baking sheet with aluminum foil and then grease the lined pan with butter. Set aside.

In a large, heat-safe bowl, combine the Rice Krispies, Teddy Grahams, 1 cup mini marshmallows, and chocolate chips. Set aside.

Place 1 package + 1 cup of mini marshmallows and the butter in a large heavy saucepan.

Heat over low until the marshmallows and butter are smooth and combined. Remove from heat and add the salt and vanilla and stir until combined. Drizzle the marshmallow mixture over the cereal/Teddy Grahams/Chocolate chip mixture

and stir until combined (some of the chocolate chips will melt, but generally speaking, they should remain in tact.) Quickly press the mixture into the prepared pan and allow to cool completely.

When ready to serve, use the long edges of the foil to pull out the Rice Krispie Treats and cut into equal pieces.

Everything you love about s’mores–graham crackers plus gooey marshmallows, chocolate–packed into Rice Krispie Treats!


Ingredients

  • 1 10-ounce bag + 2 cups mini marshmallows, divided
  • 5 cups Rice Krispies
  • 1 cup Teddy Grahams (or graham crackers broken into bite-sized pieces)
  • 1 cup chocolate chips
  • 1 teaspoon kosher salt
  • 1/3 cup butter, plus more for greasing the pan
  • 1 teaspoon vanilla

Questions & Reviews

  1. How long should we allow them to cool?? And do we cool at room temp or in the refrigerator?

    1. Rice krispie treats are one of those things you can kind of eyeball. If you want to speed up the process you can pop them in the fridge, otherwise room temp is fine, just until they are at a good consistency for handling.

  2. Can this recipe be made into a “Gift Jar” format to give as gifts? W/the recipe attached. I think it would make a great
    Christmas gift!

  3. My kids are going on a daddy-daughter camp out this weekend and fires aren’t allowed (not even camp stoves!). This will totally alleviate their s’mores woes. OBB to the rescue once again.

  4. It may be satisfying to stir butter and marshmallows together to melt them, but it’s so much faster to do it in the microwave! Just microwave the butter in a large bowl for one minute to melt it, then add marshmallows, stir, and microwave for another minute. Stir again, microwave one more minute and stir and you’ll be done. Been doing it this way for many years.

  7. Oh my goodness, made with teddy grahams? Cutest Rice Krispies ever!! Love the idea of these, love the look of these. So, so fun!

    1. The idea is awesome, but unfortunately, toasted marshmallows don’t hold up very well and you might find yourself in a bit of a mess. 🙂
