Strawberry-Mango Chicken Salad (Wendy’s Copycat)

I have oft opined about Wendy’s salads (and pined for those dearly departed salads that have been loved in days gone by and are no longer with us.) Like here and here. Their Strawberry Mango Chicken Salad was one of my favorites and alas, I know it will go away someday, never to return. Lucky for all of us, we can make it at home! Loaded with fresh strawberries and juicy mango and the most delicious Honey Citrus Vinaigrette, this salad is perfect for a single serve lunch, or make it larger for a gathering!

Ingredients Needed

  • Baby spinach
  • Spring Greens
  • Grilled Chicken
  • Feta cheese
  • Sunflower seeds – preferably honey roasted, if you can find them!
  • Strawberries
  • Mango
  • Honey Citrus Vinaigrette – Orange juice, lime juice, honey, garlic, onion, salt, pepper, cumin, oil

How to Make Strawberry Mango Chicken Salad

  1. To make the dressing, just vigorously shake all the ingredients in a jar. So quick and easy!
  2. For the salad, layer everything together and then drizzle.
  3. That’s it! Keep all of the ingredients handy and you’ll have enough dressing to pull this together every day all week.

Strawberry Mango Chicken Salad (Wendy’s Copycat)

Ingredients

Salad

  • 1 1/2 cups baby spinach
  • 1 1/2 cups spring greens
  • 3 ounces cooked grilled chicken cut into strips
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon honey roasted sunflower seeds or regular roasted
  • 1/4 cup sliced strawberries
  • 1/4 cup cubed mango

Honey Citrus Vinaigrette

  • cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 garlic clove pressed through a garlic press
  • ½ tablespoon grated onion
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¾ teaspoon cumin
  • ½ cup vegetable oil avocado oil works great too

Instructions

  • To make dressing, combine all ingredients in a mason jar. Secure jar on lid and shake vigorously for dressing to emulsify.
  • Toss all salad ingredients together in a bowl.
  • Drizzle with dressing and serve immediately.
