Oh, hey, everyone. It’s been a hot minute. We got completely busy with our Freezer Meal Guidebook (which you definitely need as we move into the crazy busy holiday season). Throw in our families, school for me (teaching and learning…I’m tired, y’all), Sara’s been busy in her shop, and to top it all off, my Instagram was disabled and I’m trying to recover it right now (I haven’t gone missing, promise.) We love you all and we’re back at it this week with one of my family’s new favorite quick and easy meals–TikTok Ramen.
After posting our TikTok pasta, I got a lot of requests for TikTok Ramen. I had never heard of it, but after a little digging, I discovered that it was basically amped up ramen noodles with an egg for protein. You could also add all sorts of veggies–stir-fry the ginger and garlic with a little coleslaw mix, carrots, peas, etc. This is a great recipe to teach kids basic kitchen skills–I’ve also included ingredients to make a single serving because it’s one of our favorite quick lunches or dinners. You can add a fried egg (our favorite), scrambled egg, or even a soft-boiled egg.
How to Make TikTok Ramen
You’ll need a package of Ramen (seasoning discarded or reserved for another use), brown sugar, soy sauce, garlic, Sriracha sauce, ginger, green onions, eggs, and everything seasoning. If you’re not familiar with Everything Seasoning, it’s basically the seasoning that goes on Everything bagels. Everything Seasoning started out as a Trader Joe’s thing, but I’ve started seeing it everything–Walmart even has its own house brand.
Bring a large pot of water to a boil and cook the ramen noodles for 2 minutes. Drain and set aside.
Combine the soy sauce, water, brown sugar, and sriracha and set aside. For my family, 1/2 teaspoon of sriracha per person is perfect, but some people might want it more or less spicy.
While the water is boiling and the noodles are cooking, melt the butter in a large skillet over medium heat. When the butter is bubbly, add the garlic and ginger and cook for 1 minute. Increase the heat to medium-high and add the the soy sauce mixture. Cook until bubbly (about 1 minute). Add the noodles and stir to coat completely.
Reduce the heat to medium and push the noodles to 1 side of the pan. If necessary, add a little more butter to the pan. If you’d like fried eggs, carefully crack the eggs into the pan. Scrambled eggs more your style? Crack the eggs into a bowl, whisk them together with a little water, then pour them into the pan. Cook until done (click HERE for a tutorial on fried eggs and HERE on a tutorial for scrambled eggs.)
Divide the noodles among 4 bowls. Add egg and, if desired, additional sriracha, and sprinkle with green onions.
Add Everything seasoning.
Enjoy!
