{Quick & Easy!} Creamy Fruit Freeze

Did you all have a happy 4th?  Hopefully you ate lots of yummy food and saw lots of sparkly fireworks and all around had a great time.   Since it’s Monday I thought I’d start us off with something fun this week.  Attention, attention! You do not need an ice cream maker to make this!  It’s super easy, and a little more rich and elegant than a sorbet, but easier and lighter than an ice cream.  Somewhere in the middle.  The great part is that you can customize the flavor and make it with whatever you have!

I happened to have some gorgeous blackberries, and some perfectly ripe mangoes (mangoes courtesy of mango.org).  So I just popped them in my food processor with some sugar to make a puree.

Puree until it’s nice and smooth (you could strain the seeds out at this point, but I leave them in)

And then save a portion of the puree to use at the end.

Next you just need some fresh whipped cream, mmm

No just fold the whipped cream into the puree.  Make sure not to stir at this point.  Folding means to gently scoop from the bottom and fold it over to the top. That way you don’t use all of that nice fluffy air in the cream.

Guess what?  Almost done!  Just pop it into a freezer safe container now and chill until it’s at a good scooping consistency.  A few hours should do it.

When it’s ready to eat, spoon into bowls and use the reserved puree as a sauce.

Amazingly delicious and oh so easy!  Try it with strawberries, peaches, you name it!

  3. This is incredible! I’ve been trying to move away from processed foods and this is a wonderful dessert in place of store bought icecream. I made it with strawberries (actually frozen ones that I just thawed a little so I could puree them) and today I will try peach/ blueberry. Thanks!

  6. Made this yesterday for dinner with friends. It was excellent! I used strawberries and blackberries, with one lonely not-perfectly-ripe mango that no one could taste. Regardless, it was quite yummy. My cream didn't whip up very well… I'm blaming the Arizona heat, as we just moved. Yet, it still was really tasty! Can't wait to use my other cup of cream and do it again!

  9. Sally- I don't know, I've never tried canned fruit, but give it a shot, I bet it would be great! You might want to still add a little sugar since the cream is unsweetened and it mellows out the sweetness of the fruit. But you probably don't need the full amount.

    May I tell you about our Instant Ice Cream? We use some half and half, milk and frozen fruit in a blender. A spoon or so of sugar and some vanilla are tossed in. Blend to an ice cream consistency (the ratio of frozen fruit is very high) and eat. That's it.

    I have loved all the recipes I have tried from your site. You two are awesome! This recipe looks great, I'll have to give it a try. I have to tell you pie is not my favorite (actually my least fav) but it is my husbands fav! Sooo I always try to make crust but never very well, for the 4th I made your small pies with your crust recipe – the results- husband said wow these are good the crust is almost as good as Mom's. YEAH! I also made red,white and blue cupcakes with your Perfect frosting! (I always get compliments when I make it) But the ultimate was when my SIL ate one and said that the frosting was just like their mom made on her Red Velvet cake. My MIL has been gone for 18 years but you never stop trying to please the people you love and when I got these two compliments I was thrilled! THANK YOU THANK YOU THANK YOU!

  19. This reminds me of one of my favorite desserts my grandma used to make. You use whipped cream, cherry pie filling, drained crushed pineapples, and vanilla pudding mix. Fold it all together then you can either eat it like that ore freeze it. YUM!

    I want to try yours with fresh fruit.
