Avocado and Egg BLT introLast week on The Scoop I wrote about exercise and shared a little bit of my personal weight-loss experience.  I was overwhelmed by the response that little post received and the huge amount of interest in follow-up questions.  One of the themes that ran strong across the board was that there are a lot of people that struggle with nutrition.  Many of us get stuck in the lunch time rut- especially if you’re a stay at home Mom and find yourself snacking on your toddler’s food or not even taking the time to eat a real meal.  I know it’s sometimes challenging because you don’t want to take the time and effort to actually cook a meal just for yourself, so I’ve been sharing more and more of my quick fix meals for one.  When you keep your fridge stocked with a few basic things, you can create really quality, healthy, filling, meals in just a few minutes.  Some examples are this Healthy Thai Chicken Salad for 1, Eggs on Toast with Creamy Spinach Sauce, and our popular Bruschetta Chicken Pesto Wraps.  You’ve asked for more, so here go.  (Ask me for cookies and I’ll deliver those as well.  I’m nice like that.)  This lunch has been one of my favorites lately; I’ve actually eaten it for lunch every day this week!

Avocado and Egg BLT

Start with a slice of your favorite bread.  I’m a huge fan of Dave’s Killer Bread.  I differentiate them by colors, and I always buy the green bag.

Pop that in the toaster and while it’s toasting, mash up a little avocado (make sure it’s ripe!)  You’re only using a little avocado, so I usually keep it in the fridge, and even though it will brown a little, I still use it the next day and just scrape off the top.  Another great solution is to crack it open for lunch, and then use the rest for dinner that same night, like on our Fajitas, Tortilla Soup, White Chicken Chili, or one of our all-time favorites: Steak and Mango Salad.  If none of those sound good, check out our Latin section or make my superfood, for your hair!

If you have bottled minced garlic, I like to add a little in with my mashed avocado, along with a pinch of salt.

Spread that onto your slice of bread

and top with a few slices of red onion and a slice of bacon.

I love the pre-cooked microwave bacon by Hormel.  I pretty much always have a bag like this from Costco.  It’s so convenient because you can grab one slice at a time and it’s done in seconds.  Plus it’s only 40 calories per slice.  Totally doable on a healthy diet.

Place a lettuce leaf or a handful of spinach or other greens on your bread.

And a sliced hard-boiled egg.  About once a week, I cook a dozen or so hard boiled eggs in my steam oven and keep them in the fridge.  My kids love them, and they’re great for chopping up on a salad or on a sandwich, like this.

To top it off sprinkle with some salt and pepper, and if you like (I like), a drizzle of our Garlic Olive Oil is the perfect finishing touch.

That took less than 5 minutes to make and it’s full of protein and whole grains and totally delicious.  Bam.
