Pineapple Bacon Burgers are exactly what they sound like- and they’re amazing! A simple, flavorful burger on a soft brioche bun, topped with grilled pineapple, crispy bacon, and bbq sauce. These burgers are restaurant-quality delicious, you’ll want to make them all year long!

Ingredients and Equipment

  • Beef – I use lean ground beef, which is at least 92% lean, 85% ground beef is perfectly delicious (probably more so!) as well.
  • Pineapple – I like to use fresh pineapple, but if you like you could used sliced, canned pineapple. Grilling canned pineapple is a little tricky though, since it’s not as firm, you’ll have to be very careful there. When using fresh pineapple, I use a small biscuit cutter to cut out the center core of my slices. You could just use a knife if you do not have a small cutter of some sort.
  • Barbecue Sauce – Use your favorite bottled sauce, or whip up a batch of this Quick and Easy Barbecue Sauce.
  • Bacon – You only need a slice or so for each burger. If you prefer not to have leftover bacon to use up, simply grab a few slices from your store’s butcher case, or even use pre-cooked microwave bacon.
  • Buns – Any bun will do, though I prefer a brioche bun. Hawaiian sweet buns are also delicious. You could even try your hand at homemade hamburger buns.

How To Make Barbecue Bacon Burgers

  1. Preheat grill to medium. Combine ground beef, salt, and barbecue sauce, and form into 4 patties.
  2. Place burgers and pineapple slices on grill.
  3. I like to mix a 50/50 combo of bbq sauce and mayo, but you could use both of those things separately if you prefer. Spread sauce on buns, place burgers on top, top with the slice of pineapple, bacon, and an extra drizzle of bbq sauce.

Frequently Asked Questions

Can I make these ahead of time? Feel free to combine your ground beef and barbecue sauce and form patties ahead of time. Separate with layers of plastic wrap or parchment, cover, and store in the refrigerator. You could also cook your bacon ahead of time. If you are making buns or sauce from scratch, those can also be done the day before.

Pineapple Bacon Burgers

Ingredients

Burgers

  • 1 pound lean ground beef
  • 1 teaspoon kosher salt
  • 2 tablespoons bbq sauce
  •  

Additional ingredients

  • 4 brioche hamburger buns
  • mayo
  • 4-8 slices bacon cooked
  • 4 slices fresh pineapple about 1/3-1/2 inch thick
  • additional bbq sauce
  •  

Instructions

  • Preheat grill to medium.
  • Combine ground beef, salt and 2 tablespoons of your favorite bbq sauce.
  • Shape into 4 patties, and flatten to roughly the same size of your buns (they will shrink some during cooking).  Place burgers on the grill and cook for a few minutes on each side, until the internal temperature registers 160 degrees.
  •  When you flip the burgers, add the pineapple slices to the grill, making sure you get a chance to flip them once as well.  They should be tender and have some char marks on them. 1-2 minutes on each side should be sufficient.
  • If desired, toast your buns. Spread mayo on each side, or what I did in my photos is a 50/50 mix of mayo and bbq sauce.
  • Place burgers in buns, top with the slice of pineapple, top with 1-2 slices bacon, and an extra drizzle of barbecue sauce.
