Every Sunday this month we’re going to share a “Quick Fix” meal with you. These are things that we don’t necessarily need an entire recipe and step by step photos for. It’s more of an idea of things you can throw together for a quick and delicious meal. And since we’re celebrating feta this month- they’re all going to involve that!
This salad wrap is in the category of “Mommy Lunch” for me. Didn’t know there was such a thing? How many of you stay home with your kids and find yourself at lunch time nibbling on chicken nuggets and gogurt? Or how many of you go to work and have to either pack a lunch or buy something instead? Or how many of you fly right by the lunch hour because you either don’t notice it has come and gone or you just don’t have the energy to prepare something so you end up grabbing convenience foods? Well with a few simple staples you can throw this together in a flash and have a real, grown-up meal. The sweetness of the dressing and craisens combined with the saltiness of the feta and bacon is out of this world!
Sweet and Salty Salad Wrap
Recipe by Our Best Bites
*I keep a few things on hand in my fridge to make things like this truly “quick and easy”. It’s especially helpful when you’re only cooking for 1 or 2 people and you don’t want to go to the effort of say, cooking chicken or bacon for a simple lunch.
Toss together the following and then wrap in a tortilla, pita, or flatbread wrap:
baby spinach– pre-bagged and ready to serve from the salad isle
cooked chicken– I keep pre-cooked frozen strips in the freezer, just defrost and use
craisens
crumbled bacon- again, we always have some pre-cooked microwavable bacon in the fridge for times like this when you just need a strip or two. They cook up in about 30 seconds and they’re great for sandwiches and burgers too.
feta cheese
poppyseed dressing– keep a bottle in the fridge or easily mix up this homemade one
And there you have it. Quick, easy, and incredibly delicious!

Do you make your own precooked chicken breast and freeze it? If so, do you have a certain marinade or recipe you like for the chicken. Or do you just buy like the Tyson precooked chicken strips?

Honestly, salt and pepper are usually good! Or often I’ll grab whatever salad dressing I have around. I always keep the pre-cooked strips in the fridge too, so those are great also!

Thank you! I am looking forward to these posts. I struggle with quick Sunday lunches and our evening meals. We eat a very healthy diet and it has to be low on carbs, no white flour or sugar so this is great.
It is hard to have meals on Sunday that are ready in a flash. I asked my mother in law how she did it 50 years ago and she said, "I didn't we just ate lunch at 2:00".

Yum, sounds delish! And FYI, Costco sells a BIG bag of real crumbled bacon for like $7. That's actually what we keep on hand, and then you don't even have to heat or crumble. It's just ready. 🙂 And it's simply real bacon – no funky flavored junk.
That's pretty much what I had for lunch yesterday, except replace the chicken with hard boiled egg. Yum.
